Hunter Valley Verjuice (verjus) is the juice of unripened semillon grapes, grown in the Hunter Valley that have thinned from the vine in order to concentrate the flavours. Verjuice is now seeing something of a renaissance amongst celebrity chefs who require milder and smoother alternatives to lemon juice and vinegar. When used as a flavour enhancer it adds richness and balance to your cooking. As it is not as strong as other acidulates there is less chance of it masking flavours and, used correctly, it will pleasantly enhance taste. Great for marinading meats, for deglazing and for reductions of meat juices, making sorbet, making non-alcoholic drinks with your favourite additive. The grapes are all handpicked, crushed, settled and consigned to a refrigerated stainless steel tank where the fruit characters of grapes are maintained, then the addition of natural occurring acids such as tartaric, malic and citric are added to create the high acid content that is necessary in the verjuice.
